Próxmia leva: Double Chocolate Oat Meal Stout / Next Batch: double Chocolate oat meal stout

Como sincero apreciador das escuras e amargas, vamos nós denovo inventar moda.
(As a true fan of the dark and bitter, here we go again into experimentation,)

Para o próximo sábado, a leva escolhida vai ser uma Double Chocolate Oat Meal Stout.
(For the next saturday, the chosen batch will be a Double Chocolate Oat Meal Stout)

De grãos, esclhi os seguintes:
(The grain bill is the following)

Pilsen: 4.500Gr
CaraAroma: 150Gr
CaraAmber: 150Gr
Roasted Barley: 50Gr
Carafa II: 200Gr
Malte chocolate: 250Gr
Aveia em flocos: 500Gr

Paradas:
Mash Schedule:
52ºC - 25min
62ºC - 60 min
68ºC - 25 min.

Lúpulo: Nugget: 28Gr @ 60 min
(Hops)  Saaz: 15Gr @ 15 min.

Extras: 400 Gr de chocolate meio amargo ralado aos 05 min da fervura.
Extras: 400 Gr of grind Dark chocolate @ 05 min during the boiling

O que vai virar eu não sei. só espero que fique ao nível de uma boa stout!            
I don´t have a clue if it will work, I just hope this turn out to be a good stout!

Pale Ale além das expectativas / Pale Ale beyond expectations.

Sábado é dia de brassagem e este foi, digamos, singular.

Saturday is brew day, and last saturday was, lets say, singular.

Para começar, a lubrificação dos sistemas foi feita com a degustação de uma Irish Red Ale da última leva: Leve, malte equilibrado, com um toque a mais de caramelo e sem nnhuma nota marcante de lúpulo, como na primeira leva da Ruiva... Na minha opinião, pefeitamente dentro do estilo.

To start, the system lubrication was done with the use of an Irish Red Ale sample from the last batch. Light, balanced malt character, with a little touch of caramel and with any noticeable note of hops beyond the desired for the style, as it happened on the first batch of the redhead... In my opinion, perfectly inside the style guidelines.

Bom, o que tinha em mente era produzir uma Pale Ale com bastante drinkability, com bom corpo, partindo da seguinte receita:

Well, what I had in ins was producing a very drinkable Pale Ale, with good body, with the following recipe:

Maltes / Grain Bill:
5Kg  Pilsner,
 200 Gr CaraHell,
150Gr  CaraAmber
250Gr  CaraPils

Lúpulos:

28Gr Centennial aos 60 min
8 Gr Centennial aos 50 min
15Gr Amarillo aos 10 min
10Gr US goldings aos 5 min.

3 Gr whirfloc aos 5 min

Fermento (yeast): Fermentis SafAle S-04.

Mash steps:

52ºC 20 min.
65ºC 80 min.

Para "abrilhantar" o evento, resolvi introduzir algumas novidades, que acabaram me rendendo um "doce" problema. Por influência do meu colega Bode (http://henrikboden.blogspot.com/) usei um produto chamado "5.2 PH stabilizer" esta belezinha promete, com uma colher de sopa rasa no "dough-in", travar o PH em 5,2, melhorando sobremaneira a extração.

In order to make things a litthe bit "shiner", i decided to introduce some novelties, which turned out to give me some "sweet" problems. Under influence of my fellow Bode (http://henrikboden.blogspot.com) I used a product calle "5.2 PH stabilizer". This beauty claims to lock the mash PH in 5.2 only with the addition of one tablespoon of the product, enhancing extraction.



Seguindo as instruções do produto, tratei a água da brassagem logo após acrescentar o malte moído. Também tratei a água do enxágue com amesma proporção: uma colher de sopa rasa para cada 19,5L.

Following the label instructions, I treated the mashing water soon after doughing in the crushed malt. I also treated the sparge water with the same proportion: 1 tbsp for 5 gal of water.

A "doce" surpresa foi um aumento absurdo da eficiência! Após a brassagem e enxágue, coletei 30 Litros de mosto com uma "pre-boil gravity" de 1.050!!!

The sweet surprise was an absurd enhancement of efficiency! After lautering and sparging I collected 30 liters of a 1.050 pre boil wort!!!

Sem duvidas, para quem, como eu, sempre teve problemas de eficiência, foi uma grata surpresa!

Without any doubt, for a guy who ever had troubles with efficiency, it was a very nice surprise!

O Excesso de eficiência foi corrigido com adição de água fervida durante a fervura do mosto, o que me levou a uma OG de 1.045... perfeitamente dentro dos parâmetros do estilo.

The excess of efficiency was corrected with the addition of boiled water during the boiling stage, which drove me to an OG of 1.045... perfeclty inside style guidelines.


Durante a fervura, foi feita a lupulagem e adição do whirfloc.

During the boling I added the hops and whirfloc.

Por fim, a aeração contou com uma novidade: bombinha importada e pedra de aço inox de 2 micron atarrachada a uma haste de inox de 26 polegadas, o que deixou tudo muito melhor e de fácil sanitização.

At last, the aeration  counted with a novelty: a new imported aeration pump, and a 2 micron stainless steel aeration stone attached to a 26 inch stainless steel tube, what let everything better and easier to sanitize.

Bom, apesar de Pale Ale ser um estilo bem fácil e básico, que eu gosto de fazer por ser uma cerveja de características bem leves, esta brassagem foi digna de nota devido à eficiência marcante. Bendito seja esse 5.2!!!

Well, despite the fact of Pale Ale to be a very easy and basic style, which I like very much to do because it is a beer with very light character, this mashing worthed the note due to the noticeable efficiency. Thanks to the 5.2!!
