De volta ao básico - Back to basics

Pois é... para quem pensou que eu havia desistido da minha carreira de cervejeiro caseiro, aqui estou eu de volta.

A última leva produzida pela Kessbier foi produzida em 5 de março de 2011, portanto, fiquei quase três meses longe ds panelas, resultado de excesso de trabalho, como aconece em qualquer boa família.

Enfim... retornando à atividade cervejeira, a idéia inicial foi retomar os projetos de onde parei, mas na última hora resolvi colocar o projeto da double chocolate oat meal stout no armário. Fiz isso porque percebi que estava me faltando uma cerveja mais leve para os dias de calor e seca típicos do "inverno" da nossa região (pra quem não sabe a temperatura média no Mato Grosso de abril a setembro é de 32ºC).

Então, voltei à prancheta e, com algumas alterações na receita anterior, produzi uma Pale Ale.

A receita é básicamente a mesma que já está postada (http://kessbier.blogspot.com/2011/03/pale-ale-alem-das-expectativas-pale-ale.html), com três alterações:

1 - Reduzi em 50G a quantidade de CaraHell e coloquei 50G de CaraMunich I.
2 - Mudei o fermento de S-04 para US-05 (O S-04 sedimentou tão compacto que não consegui purgar, nem no cônico, e deixou a cerveja um pouco amarga demais por causa disso).
3 - Substituí o Lúpulo Amarillo em pellets por Willamette em folhas. MEsmas quantidades, e mesmo tempo, porque o AA é basicamente o mesmo, mas eu queria um pouco mais de aroma em vez de amargor.
O amargor continuou por conta de 28G de Centennial em pellets, aos 60 min.

Pre-Boil Gravity: 1.035
Total de produto final coletado: 23,5L
OG: 1.041.

Em algumas semanas psoto a degustação.

E a Oat Meal Stout? Faço ela em 15 dias.

For those who thought I quit my homebrewer career, I´m back.


The last beer I made was produced on mach 5th, therefore I spent almost 3 months away from my tuns, a pleasant reward of the excess of work.


Anyway... resuming the homebrewing activity, the initial idea was to begin exactly where I stopped, but in the last minute I decided to abort the Double Chocolate Oat Meal Stout project (for a while). Did this because I was lacking an easy drinking beer for the next months of dry and heat typical of our region "winter" (fo those who don´t know Mato Grosso State yet, in the "winter" the average temperature is about 32ºC)


So I redesigned some details of my last Pale Ale recipe.


The recipe is basically the same I posted in the past (http://kessbier.blogspot.com/2011/03/pale-ale-alem-das-expectativas-pale-ale.html), with three modifications::


1 - I reduced 50Gr of CaraHell ans replaced it for CaaraMunichI
2 - I replaced the Fermentis S-04 for the US-05...The excessive sedimentation of S-04 got me some trouble when purging from the conical last time.
3 - I replaced the Amarillo pellet hop for the whole leaf Willamette. Same quantity. Same boiling time (the Aa is almost the same).
The bitterness hop still the same: pelletized Centennial (28grams).
