Yeár´s end, too much work and a long period of ssilence... Last time I posted at the blog, my chest freezer had gone nuts, and the temp controller, despite shwing 20ºC, were almost freezing my beer!!!! Like the average homebrewer, I adopted the obvious solution: IMPROVISATION!!! I submerged the temperature sensor inside a liquid solution, which avoided sudden temp changes and provided a more accurate temp reading, providing the beer more stability.
And how about the Kölsch? It is perfect: light, clear and perfectly inside the style parameters!

Kölsch # 2 was only the first step on the new equipment test though. Last Week I mashed, at full capacity, an Oat Meal Stout with chocolate, obtaining 70 liters (approx. 25 gallon) of final product. The technical problems I had last time were troubleshooted: the problem os the brewsculpure leveling was resolved with the use of a pump and one register (a tap) for the sparging. The slow cooling of the wort was resolved with the use of another pump, for pressurizating the couterflow chiller.

The final result was excellent! 70 liter (almost 25Gal) of wort, which are fermenting in a conical, one bucket and one carboy. the content of the bucket will be matured with cherry puree, for my first fruit beer: Kessbier´s Derk Forest Stout.
